Protein is a key indicator of nutritional and commercial value and should be considered alongside digestibility and amino-acid profile. Ash reflects the mineral fraction, while controlled moisture supports storage stability and handling.
Total volatile nitrogen (TVN) and histamine are indicators linked to raw-material freshness and protein degradation. Controlled levels support fresh-raw-material and premium-quality positioning, while TVN should also be considered in relation to processing.
The LT concept combines fresh raw material with gentle processing. 999 LT and Lota Super Prime use two-step low-temperature drying, while 999 Premium LT Spec targets comparable key chemical limits using normal steam drying.
